Our Story

TillingHouse is where a grand New Jersey celebration comes to life, on the historic grounds of the Suneagles Golf Club at the Jersey Shore. Elegance, hospitality, and the cooking of one of the state's most respected culinary teams, gathered under one roof.

Set on the storied grounds of the Suneagles Golf Club in Eatontown, TillingHouse was made for the celebration you have always pictured. The Ballroom rises to welcome as many as five hundred guests, its 52-foot marble-top bar and garden terrace opening onto a stone wall and a wishing well. The Parlor keeps a quieter magic, gathered around a one-of-a-kind 1926 fireplace. Every room here was designed for a single purpose. To make the most important days of your life feel effortless, and unforgettable.

At the heart of it all is the kitchen. TillingHouse is guided by Chef Ryan DePersio, one of New Jersey's most respected chef-restaurateurs and the name behind Battello in Jersey City and Fascino in Montclair. His path ran through some of the most exacting kitchens in the world, from Jean-Georges in New York to La Braserie in Paris and Florence's Enoteca Pinchiorri, before Fascino earned a New York Times rating of Excellent and a James Beard semifinalist selection. That pedigree lives in every plate we serve.

Because our catering is entirely in-house, there are no outside vendors to coordinate and no compromises to make. Executive Chef Dennis Mathews leads the kitchen day to day, carrying that standard into every service, from a passed canapé on the terrace to the final course of the evening. What reaches your table is cooked here, for you, by a team that treats a wedding dinner with the same seriousness as a fine-dining service.

The care extends well beyond the plate. A private Bridal Suite with an on-site hair and makeup salon lets the morning unfold without a single drive across town. A Family Suite and a Game Room give everyone a place to gather. From the first tour to the last toast, our team carries the details so you can simply be present, among the people who matter most.

As Director of Operations, Joe Calafiore keeps the many moving parts of a TillingHouse event moving as one. From the first tour to the final toast, he oversees the details that let a celebration feel effortless to the people living it. His is the quiet work behind a seamless day. The logistics, the timing, the hundred small decisions that guests never notice and always feel.

As Director of Events, Erica Brienza is often the first person a couple meets, and the steady presence beside them through every decision that follows. She shapes the arc of the day, guiding menus, timelines, and the small personal touches that make a celebration unmistakably yours. Planning with TillingHouse begins as a conversation, and Erica is where that conversation starts.

Cory Checket

Operations & Sommelier

Cory Checket pairs a hand in daily operations with the trained palate of a sommelier. He curates an extensive wine list of more than 200 labels and a progressive cocktail program, matching each pour to the food and the moment, from the first glass on the terrace to the last toast of the night. His is a quiet expertise, the kind you notice in the glass rather than in the explanation.
